Cheesy chive muffins
2 cups flour
1 tablespoon baking powder
¼ teaspoon salt
½ cup grated cheddar cheese
1 teaspoon finely chopped parsley
1 teaspoon finely chopped chives
½ teaspoon onion powder
1 egg, lightly beaten
1 cup milk
¼ cup oil
Stir flour, baking powder, salt, cheese, parsley, chives and onion powder in a large bowl. Create a well in the dry ingredients, and add the egg, milk and oil. Stir until a batter forms, which will be somewhat lumpy. Pour into greased muffin tins or paper muffin cups. Bake at 400 degrees for 20 to 25 minutes or until done.

Autumn morning muffins
1 cup flour
¾ cup oatmeal
¼ cup brown sugar
½ teaspoon cinnamon
½ teaspoon salt
3 teaspoons baking powder
¼ teaspoon nutmeg
1 egg, lightly beaten
¼ cup oil
⅓ cup milk
⅔ cup applesauce
In a large bowl, combine flour, oatmeal, sugar, cinnamon, salt, baking powder and nutmeg. In a medium bowl, mix egg, oil, milk and applesauce. Stir the wet mixture into the dry until a moist batter is formed.
Pour into greased muffin tins or paper muffin cups. Sprinkle a few oats on top of each muffin. Bake at 375 degrees for 25 minutes or until done.

Golden cornbread muffins
1 and ½ cups yellow corn meal
1 cup flour
¼ cup sugar
2 and ¼ teaspoon baking powder
¾ teaspoon salt
2 eggs, lightly beaten
1 cup milk
¼ cup oil
In a large bowl, stir corn meal, flour, sugar, baking powder and salt. Add eggs, milk and oil and stir until batter forms. Pour into greased muffin tins or paper muffin cups. Bake at 400 degrees for 15 to 20 minutes or until done.
