Make it a mocktail

This summer, try some cooling mocktails. They can be enjoyed by the whole family, are hydrating and skip the sugar load of other drinks. When made with fresh fruit, you also get the benefits of vitamins and minerals. Try this refreshing blend, adapted from grocery.coop.
Watermelon-mint frosé
3 cups cubed seedless watermelon
1 cup frozen strawberries
2 cups apple juice or coconut water
12 large mint leaves (plus more for garnish)
Place the cubed watermelon in a freezer container and freeze. Just before serving, combine frozen watermelon, strawberries, juice (or coconut water) and mint in a blender. Secure lid and blend until smooth. Serve immediately, garnished with a sprig of mint. Serves 4
