Fall is prime time for baked goods

When the weather gets cold and the rains start, what’s better than the warmth of the oven, the rich aroma of fresh-baked treats, and the simple pleasures of being indoors. Find everything you need at the Co-op for these tasty muffins.
Banana hazelnut muffins
3 mashed, ripe bananas
6 eggs, beaten
1-2 tablespoons honey
2 teaspoons almond extract
½ cup coconut flour
½ cup chopped hazelnuts
½ teaspoons each of cinnamon, nutmeg, salt, baking powder & baking soda
¾ cup Grizzlies Aunt Maple’s Crunchy Granola
2 tablespoons melted coconut oil
Mix wet ingredients. Mix dry ingredients. Combine wet and dry ingredients, then fill 12 lined muffin tins. For topping, toss granola with coconut oil to coat. Sprinkle some on top of each muffin. Bake for 25 minutes at 350 degrees.
