Summer Pineapple Strawberry Cooler

I am ready for summer! This recipe just puts me in the summer mood. Come-on sunshine! Pineapple juice, limeade and club soda make a refreshing drink that goes beautifully with all kinds of summer fruit. And with strawberries in season right now, they make a perfect match.

  • 1 12-ounce can frozen pineapple juice concentrate, thawed
  • 1 6-ounce can frozen limeade concentrate, thawed
  • 4 cups cold water * 1 liter club soda, chilled
  • Ice cubes
  • Fresh strawberries (optional)
  • Short (6-inch) wooden skewers
  • Assorted fruits such as halved orange slices, halved lime slices, orange sections, raspberries, strawberries, sliced kiwifruit, and mint sprigs


In a large pitcher combine pineapple juice concentrate, limeade, and water. Chill for at least 30 minutes. To serve, transfer fruit juice mixture to pitchers; add club soda, ice cubes, and fresh strawberries.

Serve with Fruit Swizzle Sticks, if desired.
Makes 14 (6-ounce) servings.

Fruit Swizzle Sticks: On short (6-inch) wooden skewers, thread assorted fruits and mint sprigs. Make-Ahead Tip: Up to 24 hours ahead, prepare the juice mixture and chill well. Proceed as directed.

Sit back, soak up the sunshine sipping a sweet drink and enjoy summer.

    Made this today for a baby shower. It was wonderful! I did a 12 oz can of limeade instead of 6oz and skipped the cold water since I knew the ice cubes would melt. In addition to the fruit listed above, we used fresh blackberries, blueberries and pineapple slices. It was a hit! :)

    Not quite understanding the 4 cups of water * 1 liter club soda ?? Is this either or?
    I am planning to use this for a shower this coming weekend but want to be clear on this. Can someone clarify that has made it?

    Karen, I think you use both. the directions hae the wter added at a different time than the club soda.

    So excited to try this! Instead of juice concentrate, I am going to substitute fresh fruit & hand squeezed fruit juice! Maybe add local honey as a natural sweetener if needed so its a healthyaide:)

    To Tammy, That's Exactly what I was thinking! A nice bottle of White Wine! LOL, I think a Pinot Grigio would pair up quite nicely! Im going to make this @ our family BBQ's, for the Adults, & Reg. for the Kiddo's. I am wodering about the adding the Water Tho, in the Wine Recipe? Would it make it too Watered down? Any Suggestion's? I may have to experiment w/ it 1st, !?? But , I still have almost 2 months, for the weather to be nice enough , So if anyone has tried this, let me know what you think!     That's kinda what I was thinking...leave out the water and adding a good Mascato. Or maybe even leaving out the club soda and water and adding a good champagne... I am having a girl's night this weekend and I really want to try it but I'm scared it won't be any good!

    To the folks worrying about different mixtures being good, don't be afraid to try! Just mix your ingredients in small amounts to find a good ratio then scale up! Also helps to add water/ice last because that obviously can make the flavours weak. Also remember to add fizzy drinks at the end to avoid them going flat.
    My mom always used to make a similar drink for every birthday party and kids couldn't ever get enough: can of pineapple juice, carton of orange juice, enough Sprite/7-UP to give it mild fizz (think Orangina), and a whole tub of vanilla ice cream which you ball up and float at the top of the punch bowl. As an adult this stuff is still just as amazing!!

    I was wondering what the bright pink petal looking things are? Are they flower petals of some kind ? I looked thru list of ingredients and couldnt find anything that was bright pink and flat looking like the picture shows? If they are flowers I would love to know what kind to use.

    Took this to a bbq for Memorial Day. It was a huge hit. For a party I would suggest doubling the recipe. When I made a batch, it make 64 oz. and I used 12 oz of limeaide instead of 6oz. I put in 1 cup of light rum. Prior to the rum it had a strong carbonated taste, so I see why water is suggested. After the rum was added, it tasted great.DId not add the the ice, just served it over ice, didn't want to dilute it. it's a keeper. found the link on pinterest
