This is one of my mom's recipes, and something I look forward to
every fall.
Pumpkin Dessert Cake
2 cups sugar
3 eggs
1 can pumpkin (15 oz)
1 stick melted butter
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp salt
1 tsp. cinnamon
1/2 to 1 cup choped nuts
Mix above ingredients and bake in a 11x17" pan (I use 13 x 9),
for 35 minutes in a 350 degree oven or until firm.
Or if you prefer, make drop cookies and bake for 10 minutes at
350 degrees for a delicious soft cookie.
Cream Cheese Frosting
3 oz. cream cheese
6 Tbsp. butter
1 tsp. vanilla
1 Tbsp. milk
2 to 3 cups of powdered sugar
Mix above, and spread on cooled cake or cookies.
